How Do I Use a Simple Syrup
Simple syrup is used anywhere you want to add a little sweetness and flavour. You can use it anywhere you would use sugar, honey, maple syrup, etc.
- Coffee & Lattes: Start with 1/2 oz (1 tbsp) and adjust to taste.
- Cocktails & Mocktails: Usually 1/2 oz to 1 oz per drink.
- Sparkling Water: 1 oz to 1.5 oz per 12 oz of sparkling water for a homemade soda.
- Kitchen: Drizzle over oatmeal, yogurt, or use as a glaze for fruit tarts.
Shelf Life & Storage
- Unopened: Shelf stable until opened.
- Opened: Must be refrigerated. Lasts a minimum of 3-4 months.
- Pro Tip: If you can't finish it, freeze it! Because of the sugar content, it freezes like a slushy, making it easy to scoop out a tablespoon at a time for your morning coffee.
How do I use a Pure Extract?
Extracts are highly concentrated. A little goes a long way:
- Baking: Most recipes call for 1 tsp to 1 tbsp.
- Smoothies/Shakes: A few drops to 1/4 tsp is usually plenty.
- Flavoring Coffee (sugar free): Add 1/4 tsp directly to your grounds before brewing or into your cream.
- Cocktails:
- Use the Citrus Extracts as a bitter, using 1 to 2 drops, no more!
- For the vanilla and coffee extracts, use 1/2 to 1 bar spoon per cocktail.
Do they expire?
No. Because of the high alcohol content (min. 35%), extracts are shelf-stable indefinitely. Over several years, the aroma may mellow slightly, but they do not spoil. Keep them in a cool, dark pantry away from direct sunlight.

Why is there sediment in my syrup?
We filter our products, but because we use real botanicals and citric acid rather than synthetic emulsifiers, some settling is completely normal. If you see tiny particles or a slight cloudiness, that is simply the "soul" of the spices and citrus. Give it a quick shake—it’s a sign of a real, minimally processed product.
What is a Pure Extract?
The difference is authenticity.
- 'Pure' Extract: Regulated by strict standards, it must contain at least 35% alcohol and consist only of alcohol, water, and the extractives from the raw ingredient. No added sugar, colors, or synthetic scents.
- Essence/Flavor/'Extract': These are often water-based or use "natural flavors" and oils to mimic the taste of the ingredient without the complex aromatic profile of the real plant. They typically contain sweeteners. Those that do contain alcohol are below the regulate 35%.
Do I need to worry about the alcohol in the extracts?
To be legally classified as a Pure Extract, the FDA/CFIA requires a minimum of 35% alcohol.
- The Science: Alcohol is the most effective solvent for capturing volatile flavor compounds that water simply can't reach. It also acts as a natural preservative, making the product shelf-stable for years.
- The "Boil Off": In baking, the alcohol acts as a carrier. Once it hits the heat of the oven, the alcohol evaporates (volatilizes), leaving only the intense flavor and aroma behind.
- In Drinks: When you add a teaspoon of extract to a cake batter or a dash to a cocktail, the final alcohol content per serving is negligible—often less than what is naturally occurring in a very ripe banana or a glass of orange juice.
*Do not use more than a couple drops of the citrus extracts in a drink.
**Consult a physician about using alcohol based extracts if you have health related issues or allergies to alcohol.
How long do your Pure Extracts last?
Our Extracts do not expire. After a few years there may be a slight reduction in flavour. The best way to store them is in the pantry out of sunlight and away from heat.

We personally hand-deliver to the "Core Lower Mainland" which includes Vancouver, Burnaby, Richmond, New Westminster, the Tri-Cities, and North Vancouver. If your postal code starts with V5, V6, V3B-V3N, or V7A-V7R, you're in the loop!
What are the delivery/shipping rates?
- Local Hand-Delivery: $8 flat rate. Orders over $40 ship for free!
- BC & Alberta: $10 flat rate via tracked courier. Free over $75.
- The Rest of Canada: $15 flat rate via tracked courier. Free over $100.
How long will it take?
For local deliveries, we are out and about several times a week. You can usually expect your syrups and extracts at your door within 1–3 business days. For Canada-wide shipping, we use tracked services (like Chit Chats) which typically arrive in 2–5 business days.
